Donnie Opolski , Lead Chef, is from East Lansing, MI where he graduated from the local Cooking and Culinary School in 2005. His experience includes executive chef and sous chef positions in Michigan and Colorado, bar and restaurant management, and private catering. He brings experience with various culinary cuisines and specializes in classic comfort food “with an interesting twist”.
Max Wood, Sous Chef, is from Show Low, AZ. As a youth, his father taught him basic cooking skills. After completing high school, he attended the Arizona Culinary Institute in Scottsdale ,AZ where he graduated in 2009 with a degree in classical French cuisine. He served as sous chef at the Stone Canyon Golf Club in Tucson, honed his French cuisine skills on St. Thomas Island, and was an independent caterer prior to joining the Monterey Court Café staff.
We are pleased to have both these talented chefs creating delicious dishes for the Monterey Court Café guests. You can also see them cooking up our menu items on the KVOA Channel 4 “Cooking Segment” at various noon and five pm news broadcasts.
